Ingredients

*500 g Violets potatoes
*5 cl olive oil
*Salt

Directions

Preheat your oven to 210 °C.
Peel the purple potatoes and cut them into very thin, even slices (1 mm) using a mandolin for example.
Rinse several times with clean water. Dry them very carefully.

Put the potatoes in a bowl. Add the oil, salt and mix well.

Spread the potatoes on a baking tray covered with baking paper.
Cook for 15 to 20 minutes.
