“Boiled egg” chérie potatoes

Cook : 30 minutes
* Good-sized chérie potatoes
* Guérande sea salt
* Slices of salted pork belly (lard)
Steam the potatoes for 30 minutes. (They should not be overcooked!)
In the meantime, gently grill the slices of salted pork belly in a pan for about 10 minutes. They should become crispy.
Cut the potatoes in half. Gently dig into the potato with a small spoon. Coarsely crush the flesh in a bowl and place back into the potato. Add a knob of butter and a pinch of Guérande sea salt.
Serve immediately with the crispy slices of lard.
