Potato röstis with creamy sauce

* 500 g special chips potatoes
* 1 onion
* 2 tbsp flour
* 1 egg
* 20 g butter
* salt, pepper and herbs


Peel and chop the onion. Peel and coarsely grate the potatoes. Mix the two together and squeeze out the excess water. Place in a salad bowl. Preheat your oven to 190 °C. In a bowl, beat the egg, then add the flour, salt and pepper, and finally the melted butter. Stir in the grated potatoes and mix gently with a fork. You can add your choice of herbs and parmesan cheese for extra flavour! On a baking tray lined with baking paper, place small heaps and then flatten them to form patties, and bake for 35 minutes.

After removing from the oven, allow to cool for a few minutes, then arrange the potato rostis on serving plates. You can make small canapés by adding a cream or sauce of your choice between two röstis: chive cream, tomato sauce, tapenade…
