Sweet and sour crumble with scallops

Ingredients* 500 g of Ratte potatoes
* About ten scallops
* 5 slices of bacon
* 100 g of butter
* 40 g of flour
* 15 g of brown sugar
* 40 g of crushed hazelnuts
Preheat your oven to 180 °C.
Peel and cut potatoes into large pieces. Plunge them into boiling salted water and cook until they are tender. Mash them, add 80 g butter, salt and pepper.
Prepare the crumble: mix the flour and the remaining butter, add the crushed hazelnuts and the brown sugar. Put a knob of butter in a frying pan and brown the crumble, about 5 minutes.
On each serving plate, arrange your mashed potatoes with a cookie cutter in the shape of your choice, then arrange the crumble on top.
Prepare the scallops by wrapping them in a piece of bacon and season with pepper. Put them on a skewer and fry them for a few minutes. Arrange on your plates next to the crumble and serve immediately!
