Ratte potato canapés, a festive idea for an aperitif:

Wash the potatoes and cut them in half lengthwise, leaving the skin on.
Steam for 10 minutes.

Garnish each potato half according to taste:
Dried duck breast and mustard, Roquefort cheese and walnuts or creme fraiche and smoked salmon…
